Are fish scales good for you? What is actually inside one

Most fish scales are thrown away — millions of tonnes a year. But a scale is not nothing: it is mostly Type I collagen and a calcium-phosphate mineral, which is why kitchens in this part of the world have simmered them into a jelly for generations. Here is what a scale is made of, what that means if you eat it, and what the evidence does and does not support.

Somewhere between 7 and 12 million tonnes of fish waste is discarded worldwide every year, and scales are a large part of it. Canning, filleting, salting, smoking — every one of those processes takes the scales off first and throws them out.

Which raises a fair question, and one people actually type into search: is there anything in a fish scale worth eating? The short answer is yes, though not for the reasons the supplement aisle usually gives. Here is what is actually in one.

What a fish scale is made of

A scale is a composite — a biological material built in layers, the way plywood is. Two components make up almost all of it.

  • Type I collagen, arranged in an orderly multi-layered mat. This is the protein part, and it is the majority of the scale by dry weight.
  • Hydroxyapatite, a calcium-phosphate mineral. This is the hard part, and it is chemically the same family of mineral that makes bone and tooth enamel rigid.

There is also a small amount of chitin-like material, the same class of substance that makes up insect and crustacean shells. The layered arrangement of the collagen is what gives a scale its odd combination of properties: it is strong, it is flexible, and it is partly transparent.

The collagen — the part we brew

Type I collagen is the same structural protein that makes up the bulk of human skin, tendon and bone. As a food it behaves like any other protein: your gut breaks it into amino acids and short peptides, absorbs them, and adds them to the pool your body draws on for whatever it happens to be building.

Collagen is not a complete protein — it is unusually rich in glycine, proline and hydroxyproline and low in others — so it is best understood as a contribution to the raw material, not a replacement for the protein in your meals. Vitamin C contributes to normal collagen formation, which is why the two are sensibly taken together.

One thing a scale does that a supplement label rarely mentions: simmer enough of them and the broth sets as it cools, with no gelatin and no gelling agent added. That is not a curiosity. It is the most direct evidence available, without a laboratory, that there is a real quantity of intact collagen in the pot.

The mineral — and what we will not claim about it

Hydroxyapatite is the hard mineral fraction, and it is genuinely interesting as a material — it is studied as a substitute for synthetic and bovine sources in medical and dental applications, largely because a fish source avoids both the disease-transmission concerns and the religious objections attached to land animals.

That is a statement about the material, not about your bones, and we want to be precise about the difference. We do not present our jelly as a calcium supplement, we do not claim it strengthens bone, and we would treat any brand doing so on the strength of "fish scales contain hydroxyapatite" as having skipped several steps. Most of that mineral is removed during preparation anyway. What we brew for is the collagen.

What the evidence does and does not show

There is a substantial research literature on peptides derived from fish scales, and it is easy to quote selectively. It should be read with two caveats that are usually left out.

The first is that most of that work is preclinical — laboratory and animal studies exploring what isolated fragments do under controlled conditions. Interesting findings there are a reason to keep researching, not a claim you can print on a bottle.

The second is that the human trials that do exist have overwhelmingly been run on hydrolysed collagen peptides — the processed powder — not on a traditional whole brew. We make both, so we have no incentive to be coy about it: if a brand selling a brewed jelly cites peptide trials as evidence for its own product, it is borrowing research that was not done on what is in the bottle.

So the honest position is a narrow one. A fish scale is a genuine source of a genuine structural protein. It is a food. It is not a treatment for any condition, and we will not describe it as one.

What kitchens worked out first

None of this was discovered by the supplement industry. 鱼鳞冻 — fish-scale jelly — is a home dish across southern China and Southeast Asia, made by simmering cleaned scales for hours until the broth is rich enough to set on cooling, then chilling it and eating it in slices or spoonfuls.

The traditional preparation is a piece of practical food science: long, gentle heat to loosen the collagen without wrecking it, aromatics to deal with the fishiness, patience instead of equipment. Older customers in Malaysia and Singapore usually do not need the dish explained to them. They tell us their grandmother made it.

What we do with ours

We brew deep-sea fish scales fresh, slowly, with goji, longan, lemongrass, pandan and red dates — the same aromatics the home version uses, for the same reasons. Nothing is added to make it set. It sets because there is enough real collagen in it to do so, and it melts back to liquid at room temperature for the same reason.

So — are they good for you?

As a food, yes, in the ordinary way that a protein-rich food is: a fish scale is largely Type I collagen, and preparing it properly turns something that was being thrown away into something worth eating. That is a modest claim, and it is the true one. Anything grander than that, from us or from anyone else, is worth reading twice.
