Why our collagen sets into a jelly (and melts at room temperature)
Chill a bottle overnight and it sets into a jelly you can lift with a spoon. Leave it on the counter and it melts back into a liquid. No gelatin, no agar, no jelly powder — the collagen does it on its own. Here is the kitchen science behind the wobble, what it proves about what is in the bottle, and what it honestly does not.

The first time a customer puts a bottle of Beyond Collagen+ in the fridge overnight, one of two messages tends to arrive the next morning. Either delight — it turned into a jelly! — or mild alarm: something is wrong with my bottle, it has gone solid. Nothing is wrong. The bottle is doing the one thing we would show you first if you visited our kitchen.
Beyond Collagen+ is whole fish-scale collagen, brewed fresh with goji, longan, lemongrass, pandan and red dates. There is no gelatin in it, no agar, no jelly powder, no gelling agent of any kind. Chilled, it sets into a jelly entirely on its own. Left at room temperature, it melts back into a drinkable liquid. This article is the plain kitchen science behind that behaviour — and an honest account of what the wobble does and does not prove.
What makes a collagen brew set?
Collagen is a long, rope-like protein, packed densely into fish scales. Simmered slowly over a gentle flame, it unwinds out of the scales and into the brew. As the liquid cools, those long strands tangle back into a loose net that traps the water around them — and the brew becomes a jelly.
Kitchens understood this long before laboratories did. It is why a good chicken stock sets in the fridge, and it is the whole craft behind 鱼鳞冻 — fish-scale jelly — which home kitchens across Asia have made for generations: scrub the scales, blanch away the fishiness, simmer for hours on low heat, chill overnight. What food science calls gelatin is simply collagen after brewing — nothing else in a kitchen sets this way on its own.
We did not invent the set. We just never processed it away.
Why does it melt at room temperature?
A jelly set by collagen alone has an unusually low melting point — close to your own body temperature. That is why a spoonful melts in your mouth without chewing, and why a set bottle left on a Malaysian or Singaporean counter softens back into a liquid within an hour or two. The net that formed in the cold simply relaxes as it warms, and the water it held flows free again. Chill it and it sets; warm it and it lets go. The change runs in both directions, as many times as you like.
Most jellies you have eaten do not behave this way. Agar — the seaweed gel in most commercial jelly desserts — sets firm and stays firm at room temperature; it will not let go until it approaches a boil. Konjac is firmer still. Even gelatin desserts are formulated stiff enough to survive a buffet table. A jelly that sets in the fridge and quietly gives up at room temperature is behaving the one way a lightly set, purely collagen brew behaves.
What the jelly proves
It proves the bottle contains real, whole collagen — and a lot of it. A brew only sets when enough collagen has been drawn into it to build that net; a thin or diluted brew stays liquid no matter how long you chill it.
It proves nothing was added to fake the texture. An added gelling agent would announce itself the moment the jelly held firm on a warm counter. Ours cannot hold — it was never built from anything that holds. For halal-observant customers this carries a second reassurance: there is no added gelatin of any origin in the bottle. The set is the fish-scale collagen itself.
And it means you do not have to take the label’s word for it, or ours. The proof is in your fridge.
What the jelly does not prove
Here is the part most collagen marketing leaves out. The wobble proves what is in the bottle. It does not prove what the bottle will do for your skin by some promised date — and you should be suspicious of any brand, ours included, that claims a demonstration can prove that. Collagen, once eaten, is broken down like any protein into building blocks; your body decides what to build with them. Results genuinely vary from person to person.
What we can honestly say is this: take it as a daily ritual — one bottle a day, ideally with vitamin C, which contributes to your body’s own normal collagen formation — and give it 90 days before you judge. Consistency is the whole game. 每天一瓶,坚持就好 — one a day, just keep at it.
The jelly also does not make our 15,000mg Flagship “work better” than the 7,500mg Everyday. Both set, because both are the same whole brew. The Flagship is simply more generous — more collagen, not more results.
The test you can run tonight
- Put a bottle in the fridge overnight. Open it and tilt it gently: the brew holds, and wobbles. Lift some with a spoon — it comes up in soft, translucent pieces.
- Leave that set jelly out on the counter. In a warm Southeast Asian room, it softens back into a liquid within an hour or two.
- Chill it again and it sets again. The cycle is plain physics and does not harm the collagen.
- Then, if you are curious, run the same overnight test on any other collagen drink in your fridge.
Why most collagen drinks can’t do this
Most collagen products — powders, sachets, nearly every drink on the shelf — are made from hydrolysed collagen: collagen deliberately cut into very short fragments called peptides. Hydrolysis is a legitimate choice with its own logic; short fragments dissolve clear and mix into anything. But fragments that short can no longer find each other and tangle into a net. A hydrolysed-peptide drink will never set, however many milligrams the label claims, because the structure that sets was processed away.
Some collagen jellies on the shelf do hold a firm shape — and that is usually the giveaway. Check the ingredient list for agar, carrageenan, konjac or added gelatin. A jelly that stays solid at room temperature is being held together by something other than collagen.
None of this is a scandal. They are different products making different trade-offs. But it does mean that the simplest thing you can ask of a collagen drink — show me — is something most of them cannot do. A whole, fresh-brewed collagen can. That is why we lead with the jelly instead of a number.
Spoon it as a jelly, or drink it straight
In practice, most of our customers do one of two things: eat it chilled with a spoon, like a clean, barely-sweet dessert, or drink it straight from the bottle at room temperature, when it is liquid. Both are exactly right. If you prefer it warm, stir in some hot water — warming melts the set back into a liquid and changes nothing else, since the brew was already sterilised at around 115°C when it was bottled. A warm cup is far gentler than anything it has been through. One bottle a day, in the morning, before food.
