Fish-scale collagen: what it is, what it does, and why Malaysia and Singapore drink it
Fish-scale collagen is sold as powder, as capsules, and as a brewed jelly — and the marketing around all three tends to promise more than collagen can deliver. This is the plain version: what a fish scale actually contains, what the two ways of processing it produce, what collagen can and cannot do for you, and what to look at on a label before you spend anything.

Fish scales are one of the more unlikely things to end up in a wellness cabinet. For most of the fishing industry they are waste — somewhere between 7 and 12 million tonnes of it are discarded worldwide every year. And yet in home kitchens across southern China and Southeast Asia, scales have been simmered into a jelly for generations, long before anyone printed the word collagen on a bottle.
Both things are true, and the gap between them is where most of the confusion about this ingredient lives. This guide is the plain account: what a scale actually contains, what happens to it depending on how it is processed, and what you can reasonably expect if you take it.
What fish-scale collagen actually is
A fish scale is built in layers. The outer part is mineral. Underneath it sits a dense, orderly mat of Type I collagen — the same structural protein that makes up the bulk of human skin, tendon and bone. That collagen is what everything in this category is after.
Collagen is a protein, which means it is a long chain of amino acids: mostly glycine, proline and hydroxyproline, in a repeating pattern that lets three strands wind around each other into a rope. That rope is why skin has structure and why a tendon can take load. It is also why a pot of simmered scales sets when it cools — the ropes unwind in the heat, tangle as they cool, and hold water between them.
Type I collagen is Type I collagen whether it came from a fish, a cow or a pig. The differences between sources are real but smaller than the marketing suggests: mainly amino-acid ratios, a slightly different setting temperature, and — for many households in this region — whether the source is acceptable at all. That last one is not a small point, and we come back to it below.
The fork in the road: brewed whole, or broken down
Once you have the scales, there are two things you can do with them, and almost every product on the shelf is one or the other.
You can brew them. Long, slow, low heat — the way the dish has always been made at home. The collagen loosens into the broth and stays essentially whole. Cool it, and it sets into a jelly on its own, because there is enough intact collagen present to do it. Nothing is added to make that happen.
Or you can hydrolyse them. Enzymes cut the collagen into short fragments — peptides — which dissolve readily in water, do not set, and can be spray-dried into a powder that keeps for years and ships anywhere. This is what the overwhelming majority of collagen drinks, sachets and capsules are made of, including ours in its peptide form.
Neither is a trick. They are genuinely different products, and it is worth being honest about the trade: hydrolysis is where nearly all the clinical trial data sits, because peptides are what researchers have mostly studied. A whole brew is fresher, it is closer to the traditional dish, and it can demonstrate what it is in a way no powder can — but it cannot borrow that research and claim it as its own.
What collagen can do, and what it cannot
Here is the part most guides skip. Collagen you swallow does not travel to your face and install itself there. It is digested like any other protein — broken into amino acids and small peptides, absorbed, and put into a pool your body draws on for whatever it is building at the time.
That means taking collagen gives your body the raw material for making its own. It does not let you aim where that material goes. Anyone who tells you their collagen targets your skin specifically, or your knees specifically, is describing something the body does not do.
Two things are worth knowing on top of that. Vitamin C is genuinely involved: it contributes to normal collagen formation, which is why it is sensible to take collagen alongside something containing it rather than on its own. And consistency matters more than dose. A daily habit held for three months is a more honest expectation than any number of days printed on a box.
What we will not tell you is that it treats anything. Collagen is a food. It is not a medicine, results vary between people, and any brand promising you a visible outcome on a fixed schedule is selling you the schedule.
Why Malaysia and Singapore took to it
The popularity here is not a marketing invention. It rests on three things that were already true.
- It is a dish before it is a supplement. 鱼鳞冻 — fish-scale jelly — is home cooking in southern China and across Southeast Asia. Older customers recognise it immediately; many describe it as something a grandmother made. That is a different relationship than people have with a tub of powder.
- Fish is acceptable where other sources are not. Bovine and porcine collagen run into religious and dietary limits for a great many households in this region. A fish source sidesteps both, which is why it is the default here rather than an alternative.
- It uses a part that was being thrown away. The scale is a by-product of fish already caught for food. Making something from it is closer to thrift than to novelty.
How people actually take it
A brewed collagen jelly is a bottle a day, in the morning, on an empty stomach. Chilled overnight it sets, and you can eat it with a spoon. At room temperature it is liquid and you can drink it straight from the bottle — which is what most of our customers do, because it is the least fuss.
Warming it is optional and harmless. Heat does not destroy the collagen — a retort-sterilised bottle has already been through far more heat than a cup of hot water — it just melts the set jelly back into a drink. The one thing not to do is dilute a bottle into water and sip it across the day: once the seal is broken, it should be finished.
Powders and capsules are taken differently, and if that format suits your morning better, it is a reasonable choice. We make a peptide version ourselves for exactly that reason. We just will not tell you it works better than the jelly, because we do not believe it does.
What to look at before you buy
The label tells you more than the advertising. Five things are worth checking, whoever you buy from.
- Does it say what form the collagen is in? Whole brewed and hydrolysed peptide are different products. A label that will not say which one it is has made a choice about that.
- Is there a gelling agent in the ingredients? A jelly that sets because gelatin or agar was added is a different thing from one that sets because there is enough collagen in it to set on its own. The ingredient list settles it in one line.
- What else is in the bottle? A brewed product should read like a recipe. Ours is fish-scale collagen with goji, longan, lemongrass, pandan and red dates, and nothing else unless you chose the sugar option.
- How long does it keep? A very long shelf life usually means the product was built for the warehouse. A short one usually means it was made fresh in small batches. Neither is wrong — but it tells you which kind of product you are holding.
- What does the brand promise? This is the most useful test of all. Anything claiming a fixed number of days, a cure, or a result it guarantees has told you how much to trust the rest of the label.
The honest summary
Fish-scale collagen is a real food with a long domestic history and a genuine nutritional basis: it is Type I collagen, the same protein your own body is largely built from, from a source most households here can accept. It gives your body building material. It does not aim that material, cure anything, or work on a schedule.
